Special heritage breed Cerdo Ibérico pigs roam the wooded meadows of western Spain, gorging on a natural supply of wild acorns that give the hams their distinctive and complex nutty flavor profile.
On par with Kobe beef or caviar, this finest of all hams will satisfy the most selective gourmet. Serve it sliced thinly on a warm plate with a fine glass of Spanish wine.
Jamón Ibérico de Bellota is best served in accordance with Spanish tradition by placing the room-temperature ham on a special holder, or jamonero, and slicing off thin, delicate slices. The included instructions detail long-term care for the ham.
